- 200 grams enoki mushrooms
- 1/2 cup all-purpose flour
- 1/2 cup cornstarch
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2/3 cup cold sparkling water
- Vegetable oil for frying
Instructions
- Heat vegetable oil in a heavy-bottomed pot to 350°F (175°C).
- In a bowl, whisk together flour, cornstarch, garlic powder, onion powder, salt, and black pepper.
- Slowly add cold sparkling water to the dry ingredients and whisk until smooth.
- Trim the enoki mushrooms and separate them into small clusters. Pat dry thoroughly.
- Dip each cluster into the batter, letting excess drip off.
- Fry in hot oil in batches for 2 to 3 minutes until golden and crispy.
- Transfer to a wire rack to drain. Sprinkle with a bit of salt if desired.
- Serve hot with your favorite dipping sauce.
