- 12 frozen dumplings
- 4 cups arugula or mixed greens
- 1 cup cherry tomatoes, halved
- 1 small cucumber, thinly sliced
- 2 green onions, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1 tablespoon toasted sesame seeds
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon honey or maple syrup
- 1 small clove garlic, minced
- 1/2 teaspoon grated ginger
Instructions
- Heat a nonstick skillet over medium heat with a splash of oil.
- Whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger in a small bowl to make the dressing.
- Add dumplings to the skillet and cook until golden and crispy, about 6–8 minutes, turning occasionally.
- In a large bowl, combine arugula, cherry tomatoes, cucumber, green onions, cilantro, and mint.
- Let the dumplings rest on a paper towel for 1 minute, then add to the salad.
- Drizzle with dressing and gently toss to coat everything evenly.
- Sprinkle sesame seeds on top and serve immediately.
