- 2 boneless chicken breasts, thinly sliced
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs, beaten
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 1/2 cups shredded romaine lettuce
- 1/4 cup Caesar dressing
- 1/2 cup shredded mozzarella cheese
- 8 slices pepperoni (optional)
- 1/4 cup pizza sauce or marinara
- 4 slices ciabatta or sourdough bread
- 2 tablespoons softened butter
- Olive oil for frying
Instructions
- Heat a heavy skillet over medium-high heat with olive oil.
- Dip chicken into beaten eggs, then coat with breadcrumbs mixed with Parmesan, garlic powder, salt, and pepper.
- Fry chicken until golden brown and cooked through, then set aside.
- Toss shredded romaine lettuce with Caesar dressing in a small bowl.
- Butter one side of each bread slice. On the unbuttered side, layer marinara sauce, mozzarella, optional pepperoni, fried chicken, and dressed lettuce.
- Top with the second slice of bread, buttered side facing out.
- Grill sandwich in the skillet until both sides are golden and the cheese is melted.
- Remove, slice in half, and serve hot.
Notes
- Use a meat mallet to pound chicken evenly for faster, crispier frying.
- Add extra Caesar dressing on the side for dipping.
- Let fried chicken rest on a rack to stay crispy.
