- 12 oz fettuccine pasta
- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs (preferably panko)
- 1/2 cup grated Parmesan cheese (for coating)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil (for frying)
- 2 tbsp unsalted butter
- 2 cups heavy cream
- 1 cup grated Parmesan cheese (for sauce)
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Cook fettuccine according to package instructions. Drain and set aside.
- Slice chicken breasts horizontally into thinner cutlets. Season with salt and pepper.
- Dredge chicken in flour, dip in beaten eggs, then coat in a mixture of breadcrumbs and grated Parmesan.
- Heat olive oil in a skillet over medium heat. Fry chicken until golden and cooked through, about 4–5 minutes per side. Set aside and keep warm.
- In a large saucepan, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and cook until sauce thickens, about 3–5 minutes. Season with salt and pepper.
- Toss cooked fettuccine with Alfredo sauce until well coated.
- Slice the crispy chicken and serve on top of the pasta. Garnish with parsley if desired.
