Ingredients

  • 12 oz fettuccine pasta
  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs (preferably panko)
  • 1/2 cup grated Parmesan cheese (for coating)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil (for frying)
  • 2 tbsp unsalted butter
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese (for sauce)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Cook fettuccine according to package instructions. Drain and set aside.
  2. Slice chicken breasts horizontally into thinner cutlets. Season with salt and pepper.
  3. Dredge chicken in flour, dip in beaten eggs, then coat in a mixture of breadcrumbs and grated Parmesan.
  4. Heat olive oil in a skillet over medium heat. Fry chicken until golden and cooked through, about 4–5 minutes per side. Set aside and keep warm.
  5. In a large saucepan, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
  6. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and cook until sauce thickens, about 3–5 minutes. Season with salt and pepper.
  7. Toss cooked fettuccine with Alfredo sauce until well coated.
  8. Slice the crispy chicken and serve on top of the pasta. Garnish with parsley if desired.
