- 2 medium sweet potatoes, peeled and diced into small cubes
- 1 cup shredded cheddar cheese

- Salt and pepper, to taste
- 2 large eggs, beaten
- 2 tablespoons olive oil or cooking spray
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Boil diced sweet potatoes in salted water for about 8–10 minutes until just tender but not mushy. Drain and let cool slightly.
- In a large bowl, combine shredded cheddar, breadcrumbs, Parmesan, garlic powder, smoked paprika, salt, and pepper.
- Dip each sweet potato cube into beaten eggs, then coat thoroughly in the cheese and breadcrumb mixture.
- Place coated sweet potato bites on the prepared baking sheet in a single layer.
- Drizzle with olive oil or spray lightly with cooking spray.
- Bake for 20–25 minutes, turning halfway through, until golden brown and crispy.
- Serve warm with your favorite dipping sauce.
