- 1–1 1/2 cups buffalo hot sauce
- 2 tbsp unsalted butter
- 1 tbsp garlic, minced or paste
- 1 tsp dark brown sugar
- 4–5 croissants, split for sandwiches
Instructions
- In a bowl, combine cold buttermilk, garlic, onion powder, mustard, paprika, salt, and black pepper. Add chicken thighs and marinate at least 2 hours or overnight.
- Preheat oven to 400°F (200°C) or prepare a deep fryer for frying.
- In a shallow dish, mix flour, thyme, onion powder, garlic powder, black pepper, salt, and paprika for the breading.
- Remove chicken from marinade, dredge in the flour mixture, pressing to coat well.
- Fry or bake the chicken until golden brown and cooked through (internal temperature 165°F/74°C).
- For the garlic-infused buffalo sauce, melt butter in a small saucepan, add garlic and brown sugar, then stir in buffalo sauce and heat until combined.
- Toss cooked chicken in the buffalo sauce until fully coated.
- For the homestyle ranch, whisk together mayo, sour cream, buttermilk, chives, lemon juice, parsley, onion powder, garlic powder, salt, pepper, and sugar until smooth.
- Assemble sandwiches by placing buffalo chicken on split croissants and topping with ranch dressing.
- Serve immediately while warm and crispy.
