Description

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup buttermilk
  • 2 tsp chives, dried or fresh
  • 1 tsp lemon juice
  • 1 tsp parsley, dried or fresh
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp sugar
  • 11 1/2 cups buffalo hot sauce
  • 2 tbsp unsalted butter
  • 1 tbsp garlic, minced or paste
  • 1 tsp dark brown sugar
  • 45 croissants, split for sandwiches

Instructions

  1. In a bowl, combine cold buttermilk, garlic, onion powder, mustard, paprika, salt, and black pepper. Add chicken thighs and marinate at least 2 hours or overnight.
  2. Preheat oven to 400°F (200°C) or prepare a deep fryer for frying.
  3. In a shallow dish, mix flour, thyme, onion powder, garlic powder, black pepper, salt, and paprika for the breading.
  4. Remove chicken from marinade, dredge in the flour mixture, pressing to coat well.
  5. Fry or bake the chicken until golden brown and cooked through (internal temperature 165°F/74°C).
  6. For the garlic-infused buffalo sauce, melt butter in a small saucepan, add garlic and brown sugar, then stir in buffalo sauce and heat until combined.
  7. Toss cooked chicken in the buffalo sauce until fully coated.
  8. For the homestyle ranch, whisk together mayo, sour cream, buttermilk, chives, lemon juice, parsley, onion powder, garlic powder, salt, pepper, and sugar until smooth.
  9. Assemble sandwiches by placing buffalo chicken on split croissants and topping with ranch dressing.
  10. Serve immediately while warm and crispy.
