- 3 tablespoons olive oil, divided
- 4 large carrots, peeled and cut into sticks
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh thyme for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C).
- In a small bowl, mix brown sugar, Dijon mustard, whole grain mustard, and 1 tablespoon olive oil to create the glaze.
- Pat chicken thighs dry and season with salt and pepper.
- Heat 2 tablespoons olive oil in a large oven-safe skillet over medium-high heat. Add chicken thighs skin-side down and sear until skin is crispy and golden, about 5-7 minutes.
- Flip chicken thighs and brush the tops with the brown sugar mustard glaze.
- Arrange carrot sticks around the chicken in the skillet. Toss carrots with minced garlic, remaining olive oil, salt, and pepper.
- Transfer skillet to the oven and roast for 20-25 minutes, until chicken is cooked through and carrots are tender.
- Garnish with fresh thyme if desired and serve hot.
