  • 6 bone-in, skin-on chicken thighs
  • 2 tablespoons brown sugar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 3 tablespoons olive oil, divided
  • 4 large carrots, peeled and cut into sticks
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a small bowl, mix brown sugar, Dijon mustard, whole grain mustard, and 1 tablespoon olive oil to create the glaze.
  3. Pat chicken thighs dry and season with salt and pepper.
  4. Heat 2 tablespoons olive oil in a large oven-safe skillet over medium-high heat. Add chicken thighs skin-side down and sear until skin is crispy and golden, about 5-7 minutes.
  5. Flip chicken thighs and brush the tops with the brown sugar mustard glaze.
  6. Arrange carrot sticks around the chicken in the skillet. Toss carrots with minced garlic, remaining olive oil, salt, and pepper.
  7. Transfer skillet to the oven and roast for 20-25 minutes, until chicken is cooked through and carrots are tender.
  8. Garnish with fresh thyme if desired and serve hot.
