Description

Golden, crispy on the outside and tender on the inside, these crispy accordion potatoes are thinly sliced, brushed with garlic olive oil, and roasted until perfectly crunchy. A simple yet impressive side dish that pairs beautifully with almost any meal.


Ingredients

  • 4 medium russet potatoes (about 8 ounces each)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a small bowl, mix olive oil, minced garlic, salt, and black pepper.
  3. Place sliced potatoes on the prepared baking sheet, spaced apart evenly.
  4. Brush the olive oil mixture generously over and between each potato slice.
  5. Roast for 50 to 60 minutes, until edges are golden and crispy and centers are tender when pierced with a fork.
  6. Remove from oven and sprinkle with finely chopped fresh parsley.
  7. Serve immediately while hot and crispy.

Notes

  • Use chopsticks or wooden spoons as guides while slicing to avoid cutting all the way through.
