- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, finely chopped

- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
- In a small bowl, mix olive oil, minced garlic, salt, and black pepper.
- Place sliced potatoes on the prepared baking sheet, spaced apart evenly.
- Brush the olive oil mixture generously over and between each potato slice.
- Roast for 50 to 60 minutes, until edges are golden and crispy and centers are tender when pierced with a fork.
- Remove from oven and sprinkle with finely chopped fresh parsley.
- Serve immediately while hot and crispy.
Notes
- Use chopsticks or wooden spoons as guides while slicing to avoid cutting all the way through.
- Brush extra oil halfway through baking for maximum crispiness.
