- 2 boneless skinless chicken thighs
- 1 cup heavy cream
- 3 garlic cloves, minced
- 1/3 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/3 cup grated parmesan cheese
- 2 tablespoons olive oil
- 1/2 cup chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat a large skillet over medium heat and add olive oil.
- Season the chicken with salt, black pepper, and Italian seasoning.
- Place the chicken in the skillet and sear until golden on both sides, about 4 to 5 minutes per side.
- Remove the chicken and sauté garlic in the same skillet, then add sun-dried tomatoes.
- Pour in chicken broth and heavy cream, stirring gently.
- Return the chicken to the skillet and let it simmer for 10 to 12 minutes until fully cooked and the sauce thickens.
- Stir in spinach and parmesan cheese until wilted and melted.
- Serve warm with sauce spooned over the chicken.
