- 1 pound Ground Beef
- 1 medium Onion, diced
- 3 cloves Garlic, minced
- 2 tablespoons Taco Seasoning
- 1 can (15 oz) Black Beans, drained and rinsed
- 1 can (15 oz) Corn Kernels, drained
- 1 can (10 oz) Diced Tomatoes with Green Chilies
- 3 cups Chicken Broth
- 8 oz Cream Cheese, softened
- Salt and Pepper to taste
- 1 tablespoon Olive Oil
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Sauté diced onions for 2–3 minutes until translucent, then add minced garlic and cook for another minute.
- Add ground beef and cook until browned, breaking it up as it cooks.
- Stir in taco seasoning and a splash of water to coat the meat.
- Add black beans, corn, diced tomatoes with chilies, and chicken broth. Stir to combine.
- Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
- Add cream cheese and stir until fully melted and the soup is creamy.
- Season with salt and pepper to taste, and let simmer for 5 more minutes.
- Serve hot with desired toppings.

- Use full-fat cream cheese for best texture.
- Add a splash of lime juice before serving for extra brightness.
