- 4 boneless skinless chicken breasts (about 1.5 pounds)
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 medium yellow onion, finely chopped
- 8 ounces cremini mushrooms, sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/3 cup grated Parmesan cheese
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Heat a large skillet over medium-high heat and add olive oil.
- Season chicken breasts with salt and pepper on both sides.
- Sear the chicken in the skillet for 5–6 minutes per side until golden and cooked through. Remove and set aside.
- In the same pan, sauté onions for 2–3 minutes. Add mushrooms and cook until browned, about 7 minutes. Stir in garlic and cook for another 30 seconds.
- Deglaze the pan with chicken broth, scraping up brown bits. Stir in heavy cream and Parmesan. Let simmer for 5 minutes.
- Return the chicken to the skillet, spoon sauce over, and simmer for 2–3 minutes until heated through.
- Sprinkle with chopped parsley and serve hot.
Notes
- Use freshly grated Parmesan for better melting and flavor.
- Don’t overcrowd the pan when cooking mushrooms.
- Add a pinch of nutmeg or red pepper flakes for a flavor twist.
- Serve over mashed potatoes, pasta, or rice for a complete meal.
