- 4 boneless, skinless chicken thighs
- 8 oz mushrooms, sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3 garlic cloves, minced
- 1 small onion, diced
- 2 tbsp olive oil
- 2 tbsp butter
- 1 tsp fresh thyme, chopped
- Salt and black pepper, to taste
Instructions
- Heat a large skillet over medium-high heat and add olive oil.
- Season chicken thighs with salt and pepper. Sear until golden brown on both sides, then set aside.
- In the same pan, add butter, onion, and garlic. Sauté until translucent.
- Add mushrooms and thyme. Cook until mushrooms brown and moisture evaporates.
- Pour in chicken broth to deglaze, then stir in heavy cream and return chicken to the skillet.
- Simmer on low heat for 10–15 minutes until sauce thickens and chicken is cooked through.
- Taste and adjust seasoning. Add a pat of butter or fresh herbs before serving.
- Serve hot over your favorite side dish and enjoy.
