Description

A cozy and creamy chicken dish simmered with earthy mushrooms and herbs in a rich garlic-infused sauce. Perfect for busy weeknights or comforting weekend dinners.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 8 oz mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3 garlic cloves, minced
  • 1 small onion, diced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp fresh thyme, chopped
  • Salt and black pepper, to taste

Instructions

  1. Heat a large skillet over medium-high heat and add olive oil.
  2. Season chicken thighs with salt and pepper. Sear until golden brown on both sides, then set aside.
  3. In the same pan, add butter, onion, and garlic. Sauté until translucent.
  4. Add mushrooms and thyme. Cook until mushrooms brown and moisture evaporates.
  5. Pour in chicken broth to deglaze, then stir in heavy cream and return chicken to the skillet.
  6. Simmer on low heat for 10–15 minutes until sauce thickens and chicken is cooked through.
  7. Taste and adjust seasoning. Add a pat of butter or fresh herbs before serving.
  8. Serve hot over your favorite side dish and enjoy.
