Description

Tender chicken breasts smothered in a rich and creamy garlic mushroom sauce, this comforting skillet dish is perfect for weeknights and dinner parties alike.


Ingredients

  • 4 boneless skinless chicken breasts (about 6 oz each)
  • 8 oz cremini mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3 garlic cloves, minced
  • 1 small yellow onion, finely diced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp fresh thyme, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Your Equipment: Heat a large skillet over medium-high heat. Add 1 tbsp olive oil and 1 tbsp butter.
  2. Combine Ingredients: Season the chicken breasts with salt and pepper. Sear them in the skillet for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. Prepare Your Cooking Vessel: In the same skillet, reduce the heat to medium. Add the remaining oil and butter, then sauté the onions for 2 minutes until softened. Add the garlic and mushrooms and cook for 6–8 minutes until mushrooms are tender and browned.
  4. Assemble the Dish: Pour in the chicken broth to deglaze the pan, scraping up the browned bits. Simmer for 2 minutes.
  5. Cook to Perfection: Stir in the heavy cream and thyme. Simmer for another 3–4 minutes until slightly thickened.
  6. Finishing Touches: Return the chicken to the skillet and spoon the sauce over it. Let it simmer together for another 2–3 minutes. Garnish with fresh parsley.
  7. Serve and Enjoy: Serve hot over mashed potatoes, rice, or pasta with extra sauce on top.

Notes

  • Use room-temperature cream to prevent curdling when adding to the sauce.
  • Don’t rush the mushrooms; let them brown for maximum flavor.
  • Deglaze the skillet with broth to capture every bit of flavor from the bottom.
  • Chicken thighs can be used instead of breasts for an even juicier result.
