- 4 boneless skinless chicken breasts (about 6 oz each)
- 8 oz cremini mushrooms, sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3 garlic cloves, minced
- 1 small yellow onion, finely diced
- 2 tbsp olive oil
- 2 tbsp butter
- 1 tsp fresh thyme, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat Your Equipment: Heat a large skillet over medium-high heat. Add 1 tbsp olive oil and 1 tbsp butter.
- Combine Ingredients: Season the chicken breasts with salt and pepper. Sear them in the skillet for 5–6 minutes per side until golden and cooked through. Remove and set aside.
- Prepare Your Cooking Vessel: In the same skillet, reduce the heat to medium. Add the remaining oil and butter, then sauté the onions for 2 minutes until softened. Add the garlic and mushrooms and cook for 6–8 minutes until mushrooms are tender and browned.
- Assemble the Dish: Pour in the chicken broth to deglaze the pan, scraping up the browned bits. Simmer for 2 minutes.
- Cook to Perfection: Stir in the heavy cream and thyme. Simmer for another 3–4 minutes until slightly thickened.
- Finishing Touches: Return the chicken to the skillet and spoon the sauce over it. Let it simmer together for another 2–3 minutes. Garnish with fresh parsley.
- Serve and Enjoy: Serve hot over mashed potatoes, rice, or pasta with extra sauce on top.

- Use room-temperature cream to prevent curdling when adding to the sauce.
