- 3 tablespoons miso paste
- 2 packs ramen noodles
- 1 cup sliced mushrooms
- 2 green onions, chopped
- 1 cup cubed tofu
- 2 large eggs
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 4 cups vegetable broth
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
Instructions
- Heat a medium pot over medium heat.
- Add a small amount of oil, then sauté garlic and ginger until fragrant.
- Pour in vegetable broth and bring to a gentle simmer.
- Dissolve miso paste in a small bowl with warm broth, then stir it back into the pot along with soy sauce and mushrooms.
- Simmer for 10 minutes. Cook ramen noodles separately according to package instructions. Prepare soft boiled eggs by boiling for 6 to 7 minutes, then cooling.
- Add tofu cubes and drizzle sesame oil into the broth.
- Place noodles in serving bowls, pour over the broth, and top with eggs and green onions. Serve immediately.
Notes
- Dissolve miso paste separately to keep the broth smooth
- Do not overcook the noodles to maintain texture
- Adjust seasoning at the end for best flavor balance
