Description

A rich and comforting bowl of creamy miso ramen made with silky broth, tender noodles, and wholesome toppings that come together in a deeply satisfying way.


Ingredients

  • 3 tablespoons miso paste
  • 2 packs ramen noodles
  • 1 cup sliced mushrooms
  • 2 green onions, chopped
  • 1 cup cubed tofu
  • 2 large eggs
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil

Instructions

  1. Heat a medium pot over medium heat.
  2. Add a small amount of oil, then sauté garlic and ginger until fragrant.
  3. Pour in vegetable broth and bring to a gentle simmer.
  4. Dissolve miso paste in a small bowl with warm broth, then stir it back into the pot along with soy sauce and mushrooms.
  5. Simmer for 10 minutes. Cook ramen noodles separately according to package instructions. Prepare soft boiled eggs by boiling for 6 to 7 minutes, then cooling.
  6. Add tofu cubes and drizzle sesame oil into the broth.
  7. Place noodles in serving bowls, pour over the broth, and top with eggs and green onions. Serve immediately.

Notes

  • Dissolve miso paste separately to keep the broth smooth
  • Do not overcook the noodles to maintain texture
  • Adjust seasoning at the end for best flavor balance
