Ingredients

  • 6 boneless skinless chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 3/4 cup chicken broth
  • 1 cup heavy cream
  • Juice of 1 large lemon
  • Zest of 1 lemon
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat a large skillet over medium-high heat and add olive oil.
  2. Season chicken thighs with salt and pepper on both sides.
  3. Sear chicken in hot oil for 4–5 minutes per side until golden brown. Remove and set aside.
  4. Reduce heat to medium, add butter and minced garlic. Sauté until fragrant.
  5. Deglaze the pan with chicken broth, scraping up browned bits.
  6. Stir in heavy cream, lemon juice, lemon zest, and parmesan cheese. Mix well.
  7. Return chicken to skillet and simmer uncovered for 10–12 minutes until sauce thickens.
  8. Adjust seasoning to taste and sprinkle with chopped parsley before serving.

  • If sauce is too thick, thin with a splash of broth.
