- 1 lb boneless, skinless chicken breasts (sliced)
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
- 3 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup chicken broth
- 1 cup grated Parmesan cheese
- 1/2 tsp Italian seasoning
- 1/4 tsp crushed red pepper flakes (optional)
- 12 oz twisted pasta (like rotini or fusilli)
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Season chicken with garlic powder, salt, and pepper.
- In a large skillet, heat olive oil over medium heat. Cook chicken until golden and cooked through, about 6–8 minutes. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Pour in heavy cream and chicken broth. Bring to a gentle simmer.
- Stir in Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer until sauce thickens slightly, 3–5 minutes.
- Add cooked chicken and pasta into the skillet. Mix well to coat evenly.
- Stir in mozzarella cheese and cook until melted and creamy.
- Garnish with fresh parsley and serve hot.
Notes
- Use rotisserie chicken for a quicker version.
- Substitute heavy cream with half-and-half for a lighter sauce.
- Add steamed broccoli or spinach for extra veggies.
