- 4 boneless, skinless chicken thighs or breasts
- 1½ lbs golden potatoes, quartered
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 tablespoon Dijon mustard (optional)
- 1 tablespoon chopped parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a large baking tray or sheet pan.
- Place chicken and potatoes on the tray. Drizzle with olive oil and season with paprika, thyme, salt, and pepper. Toss to coat evenly.
- Bake for 25 minutes, turning potatoes halfway through.
- Meanwhile, in a saucepan over medium heat, sauté garlic for 1 minute. Add cream, Parmesan, and Dijon mustard. Simmer for 2–3 minutes until slightly thickened. Season to taste.
- Remove tray from oven. Pour the garlic cream sauce over the chicken and potatoes.
- Return to oven and bake for another 10–15 minutes, until chicken is cooked through and potatoes are tender.
- Garnish with chopped parsley and serve warm.
Notes
- You can substitute heavy cream with half-and-half for a lighter version.
- Add spinach or mushrooms to the tray for extra veggies.
- Use bone-in chicken for even more flavor, adjusting cook time as needed.
