  • 1 tablespoon olive oil
  • 1/2 pound ground beef
  • 1/2 pound Italian sausage (mild or hot), casing removed
  • 1 small onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 (20 oz) package refrigerated cheese tortellini
  • 2 cups fresh spinach, roughly chopped
  • Salt and black pepper to taste
  • Pinch of red pepper flakes (optional)
  • Fresh parsley or basil, for garnish (optional)

Instructions

  1. Cook tortellini according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and sausage. Cook until browned and cooked through, breaking it up with a spoon. Drain excess fat if needed.
  3. Add chopped onion and sauté for 3–4 minutes until softened. Stir in garlic and cook for another 1 minute.
  4. Add butter to the skillet and let it melt. Pour in the heavy cream and stir until combined.
  5. Stir in Parmesan cheese and let simmer gently for 3–4 minutes until sauce begins to thicken.
  6. Add cooked tortellini and chopped spinach to the skillet. Stir to coat in the sauce and cook for 2–3 minutes until spinach is wilted.
  7. Season with salt, pepper, and red pepper flakes to taste. Garnish with parsley or basil if desired.
  8. Serve hot and enjoy!

Notes

  • Use half-and-half instead of heavy cream for a lighter option.
  • Substitute kale for spinach if preferred.
  • For a meatless version, omit sausage and beef and add mushrooms.
