Description

This creamy cod and potato skillet is a hearty, comforting one-pan meal featuring tender chunks of cod, golden potatoes, and a rich, garlicky cream sauce infused with herbs.


Ingredients

  • 1 lb cod fillets, cut into chunks
  • 4 medium potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme or parsley
  • Salt and black pepper, to taste
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Boil the diced potatoes in salted water for about 8-10 minutes, or until just tender. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the garlic and cook for another 30 seconds until fragrant.
  4. Stir in the cooked potatoes and season with salt, pepper, and thyme. Cook for 2-3 minutes, stirring gently.
  5. Add the cod chunks and gently nestle them into the potatoes. Pour in the broth and cook, covered, for 5 minutes.
  6. Remove the lid, stir in the cream and Parmesan cheese, and simmer for another 3-4 minutes until the sauce thickens slightly and the fish is fully cooked and flaky.
  7. Finish with a squeeze of lemon juice if desired, and serve warm.

Notes

  • Use skinless, boneless cod for ease and even cooking.
  • For a thicker sauce, simmer uncovered slightly longer or add a bit more Parmesan.
  • This dish pairs well with a light green salad or steamed vegetables.
