This creamy cod and potato skillet is a hearty, comforting one-pan meal featuring tender chunks of cod, golden potatoes, and a rich, garlicky cream sauce infused with herbs.

- 1 lb cod fillets, cut into chunks
- 4 medium potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1/2 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried thyme or parsley
- Salt and black pepper, to taste
- 1 tablespoon lemon juice (optional)
Instructions
- Boil the diced potatoes in salted water for about 8-10 minutes, or until just tender. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the garlic and cook for another 30 seconds until fragrant.
- Stir in the cooked potatoes and season with salt, pepper, and thyme. Cook for 2-3 minutes, stirring gently.
- Add the cod chunks and gently nestle them into the potatoes. Pour in the broth and cook, covered, for 5 minutes.
- Remove the lid, stir in the cream and Parmesan cheese, and simmer for another 3-4 minutes until the sauce thickens slightly and the fish is fully cooked and flaky.
- Finish with a squeeze of lemon juice if desired, and serve warm.
Notes
- Use skinless, boneless cod for ease and even cooking.
- For a thicker sauce, simmer uncovered slightly longer or add a bit more Parmesan.
- This dish pairs well with a light green salad or steamed vegetables.
