  • 1 pound boneless, skinless chicken breasts or thighs, diced
  • Salt and black pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup diced onion
  • 1 cup diced carrots
  • 1/2 cup frozen peas
  • 2 cloves garlic, minced
  • 1 1/4 cups orzo pasta
  • 2 1/2 cups low-sodium chicken broth
  • 1 cup milk or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, garlic powder, and onion powder. Add to skillet and cook until browned and cooked through, about 6–8 minutes. Remove and set aside.
  2. In the same skillet, add diced onion and carrots. Cook for 4–5 minutes until slightly softened, then stir in minced garlic and cook 1 minute more.
  3. Stir in orzo and toast for 1–2 minutes, then pour in chicken broth and bring to a gentle simmer.
  4. Cover and cook for 8–10 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
  5. Stir in milk, cooked chicken, frozen peas, Parmesan, and butter. Mix until creamy and heated through.
  6. Adjust seasoning if needed. Garnish with fresh parsley and serve hot.

Notes

  • Use rotisserie chicken for quicker prep.
  • Add mushrooms or celery for even more classic pot pie flavor.
  • For a richer version, use heavy cream in place of milk.
