- 1 pound boneless, skinless chicken breasts or thighs, diced

- 1/2 teaspoon onion powder
- 1/2 cup diced onion
- 1 cup diced carrots
- 1/2 cup frozen peas
- 2 cloves garlic, minced
- 1 1/4 cups orzo pasta
- 2 1/2 cups low-sodium chicken broth
- 1 cup milk or half-and-half
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, garlic powder, and onion powder. Add to skillet and cook until browned and cooked through, about 6–8 minutes. Remove and set aside.
- In the same skillet, add diced onion and carrots. Cook for 4–5 minutes until slightly softened, then stir in minced garlic and cook 1 minute more.
- Stir in orzo and toast for 1–2 minutes, then pour in chicken broth and bring to a gentle simmer.
- Cover and cook for 8–10 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
- Stir in milk, cooked chicken, frozen peas, Parmesan, and butter. Mix until creamy and heated through.
- Adjust seasoning if needed. Garnish with fresh parsley and serve hot.

- Use rotisserie chicken for quicker prep.
- Add mushrooms or celery for even more classic pot pie flavor.
