- 1 lb chicken livers, trimmed and cleaned
- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1/2 tsp dried thyme
- 1/4 tsp paprika
- Salt and pepper, to taste
- 1/2 cup heavy cream
- 1/4 cup chicken broth or white wine
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Rinse and pat dry the chicken livers. Trim off any connective tissue.
- In a large skillet, heat butter and olive oil over medium heat.
- Add the chopped onion and sauté for 4–5 minutes until soft and translucent.
- Add garlic, thyme, and paprika, and cook for another minute until fragrant.
- Increase the heat to medium-high and add the chicken livers. Cook for about 3–4 minutes per side until browned on the outside but still slightly pink in the center (do not overcook).
- Reduce heat to medium-low. Pour in the chicken broth or wine and let it simmer for 2 minutes, scraping up any browned bits.
- Stir in the cream and simmer for 3–5 minutes until slightly thickened. Season with salt and pepper to taste.
- Garnish with fresh parsley and serve hot over mashed potatoes, rice, or toasted bread.
Notes
- Do not overcook chicken livers; they should remain tender and slightly pink inside.
- For extra flavor, add a splash of brandy or sherry instead of broth or wine.
- This dish pairs well with buttery mashed potatoes or egg noodles.
