Description

Creamy Chicken Livers is a rich and comforting dish featuring tender chicken livers sautéed with onions, garlic, and herbs in a luscious cream sauce. Perfect served over mashed potatoes, rice, or crusty bread.

  • 1 lb chicken livers, trimmed and cleaned
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 tsp dried thyme
  • 1/4 tsp paprika
  • Salt and pepper, to taste
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth or white wine
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Rinse and pat dry the chicken livers. Trim off any connective tissue.
  2. In a large skillet, heat butter and olive oil over medium heat.
  3. Add the chopped onion and sauté for 4–5 minutes until soft and translucent.
  4. Add garlic, thyme, and paprika, and cook for another minute until fragrant.
  5. Increase the heat to medium-high and add the chicken livers. Cook for about 3–4 minutes per side until browned on the outside but still slightly pink in the center (do not overcook).
  6. Reduce heat to medium-low. Pour in the chicken broth or wine and let it simmer for 2 minutes, scraping up any browned bits.
  7. Stir in the cream and simmer for 3–5 minutes until slightly thickened. Season with salt and pepper to taste.
  8. Garnish with fresh parsley and serve hot over mashed potatoes, rice, or toasted bread.

Notes

  • Do not overcook chicken livers; they should remain tender and slightly pink inside.
  • For extra flavor, add a splash of brandy or sherry instead of broth or wine.
  • This dish pairs well with buttery mashed potatoes or egg noodles.
