- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 lb Brussels sprouts, trimmed and halved
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp dried thyme
- 1/2 tsp paprika
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with salt, pepper, and paprika.
- Add chicken to skillet and cook 5-7 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add Brussels sprouts and garlic; sauté for 5 minutes until tender and slightly browned.
- Pour in chicken broth and bring to a simmer, scraping any browned bits from the pan.
- Reduce heat to low, stir in heavy cream, Parmesan cheese, and thyme.
- Return chicken to skillet and spoon sauce over. Cook for an additional 3-4 minutes until sauce thickens.
- Serve warm, garnished with extra Parmesan if desired.
