Description

Creamy Chicken and Mushroom Tagliatelle is a comforting and elegant pasta dish made with tender strips of chicken, earthy mushrooms, and silky tagliatelle tossed in a rich garlic-Parmesan cream sauce. It’s a perfect weeknight meal or dinner party favorite.


Ingredients

  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breast, sliced thinly
  • Salt and black pepper to taste
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 8 oz mushrooms (cremini or white), sliced
  • 1/2 tsp dried thyme
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 10 oz tagliatelle pasta
  • 1 tbsp butter (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook tagliatelle according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, then cook for 5–7 minutes until golden and cooked through. Remove and set aside.
  3. In the same skillet, add onion and cook for 2–3 minutes until soft. Add garlic and cook for 1 more minute.
  4. Add sliced mushrooms and thyme. Cook until mushrooms are browned and any moisture has evaporated, about 5–6 minutes.
  5. Deglaze with chicken broth and simmer for 2–3 minutes. Stir in cream and bring to a gentle simmer.
  6. Add Parmesan and stir until melted and sauce is smooth. Add butter if using for extra richness.
  7. Return chicken to the pan and stir in cooked tagliatelle. Toss well to coat the pasta in the sauce.
  8. Garnish with chopped parsley and serve hot.

Notes

  • Add spinach or peas for extra color and nutrients.
  • Use a mix of mushrooms for a deeper flavor profile.
  • Substitute tagliatelle with fettuccine or pappardelle if preferred.
  • For a lighter version, use half-and-half instead of heavy cream.
