- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breast, sliced thinly
- Salt and black pepper to taste
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 8 oz mushrooms (cremini or white), sliced
- 1/2 tsp dried thyme
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 10 oz tagliatelle pasta
- 1 tbsp butter (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook tagliatelle according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, then cook for 5–7 minutes until golden and cooked through. Remove and set aside.
- In the same skillet, add onion and cook for 2–3 minutes until soft. Add garlic and cook for 1 more minute.
- Add sliced mushrooms and thyme. Cook until mushrooms are browned and any moisture has evaporated, about 5–6 minutes.
- Deglaze with chicken broth and simmer for 2–3 minutes. Stir in cream and bring to a gentle simmer.
- Add Parmesan and stir until melted and sauce is smooth. Add butter if using for extra richness.
- Return chicken to the pan and stir in cooked tagliatelle. Toss well to coat the pasta in the sauce.
- Garnish with chopped parsley and serve hot.

- Use a mix of mushrooms for a deeper flavor profile.
- Substitute tagliatelle with fettuccine or pappardelle if preferred.
- For a lighter version, use half-and-half instead of heavy cream.
