  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 2 celery stalks, diced
  • 1 medium red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 pound russet potatoes, peeled and cubed, about 4 medium potatoes
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, sliced

Instructions

  1. Place a large Dutch oven or soup pot over medium heat.
  2. Add the butter, diced onion, diced celery, and diced red bell pepper. Cook for 5 to 6 minutes, stirring often, until softened.
  3. Stir in the minced garlic, Cajun seasoning, smoked paprika, and dried thyme. Cook for 30 seconds until fragrant.
  4. Pour in the chicken broth and add the cubed potatoes, salt, and black pepper. Stir well.
  5. Bring the soup to a gentle boil, then reduce the heat to medium-low. Cover partially and simmer for 15 to 18 minutes, or until the potatoes are very tender.
  6. Use a potato masher to mash some of the potatoes directly in the pot, leaving plenty of chunks for texture.
  7. Stir in the heavy cream and softened cream cheese until smooth, then add the shredded sharp cheddar cheese and stir until melted and creamy.
  8. Let the soup simmer gently for 2 to 3 more minutes so the flavors come together.
  9. Taste and adjust seasoning if needed, then stir in half of the sliced green onions.
  10. Ladle into bowls, top with the remaining green onions, and serve hot.

  • Mash only part of the potatoes for the best balance of creamy texture and hearty chunks.
  • Soften the cream cheese before adding it so it melts smoothly into the soup.
  • Keep the heat gentle after adding the dairy to maintain a silky texture.
