- 2 large boneless skinless chicken breasts, sliced in half horizontally
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 medium yellow onion, finely chopped
- 2 tablespoons Cajun seasoning
- 1 1/2 cups heavy cream
- 1 cup chicken broth
- 1 teaspoon paprika
- Salt and pepper to taste
- 3 cups cooked rice
- 2 tablespoons fresh parsley, chopped
Instructions
- Warm a large skillet over medium-high heat and drizzle in the olive oil.
- Season chicken with Cajun seasoning, salt, and pepper. In a separate bowl, stir together cream, broth, and paprika.
- Once skillet is hot, sear chicken on each side until golden brown, about 4 minutes per side. Remove and set aside.
- In the same skillet, reduce heat to medium. Add onions and garlic. Sauté until soft, about 3 minutes. Pour in the cream mixture and stir well.
- Return chicken to skillet and simmer gently for 10–12 minutes, spooning sauce over chicken occasionally.
- Stir in cooked rice and let everything warm through. Adjust seasoning if needed.
- Garnish with parsley and serve hot.
