Description

A fresh, creamy avocado board layered with Greek yogurt, crisp vegetables, feta, herbs, toasted sourdough, and crackers. It is bright, colorful, easy to assemble, and perfect for brunch, lunch, or sharing with friends.


Ingredients

  • 1/2 cup plain Greek yogurt
  • 2 tablespoons fresh lemon juice

  • 1/2 teaspoon black pepper
  • 1/2 English cucumber, thinly sliced or shaved into ribbons
  • 1 cup cherry tomatoes, halved
  • 4 medium radishes, thinly sliced
  • 1/4 cup red onion, very finely diced
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/3 cup feta cheese, crumbled
  • 1 tablespoon everything bagel seasoning
  • 1 tablespoon extra virgin olive oil
  • 8 slices sourdough bread, toasted
  • 1 cup assorted crackers
  • 1/2 cup olives
  • 1/2 cup microgreens
  • 4 lemon wedges

Instructions

  1. Toast the sourdough slices until golden and crisp.
  2. In a medium bowl, mash the avocados with the Greek yogurt, lemon juice, grated garlic, kosher salt, and black pepper until creamy.
  3. Set a large serving board or platter on your work surface.
  4. Spread the avocado mixture across the center of the board in broad swoops and swirls.
  5. Top with cucumber, cherry tomatoes, radishes, red onion, chives, parsley, feta, olives, and microgreens.
  6. Drizzle with olive oil and sprinkle with everything bagel seasoning. Add extra salt and pepper if needed.
  7. Arrange the toasted sourdough, crackers, and lemon wedges around the board and serve immediately.
