Description
Crawfish Bread is a Louisiana favorite, combining tender crawfish tails with melty cheese, garlic, and spices, all baked into crusty French bread. It’s rich, savory, and perfect for Mardi Gras or any Southern-inspired gathering.

- 1 loaf French bread, sliced lengthwise
- 2 tbsp butter
- 1/2 cup yellow onion, finely chopped
- 1/2 cup bell pepper, finely chopped
- 2 cloves garlic, minced
- 1/2 lb cooked crawfish tails (peeled, with fat)
- 1/4 tsp Cajun seasoning
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 2 tbsp chopped green onions
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with foil or parchment paper.
- In a skillet, melt butter over medium heat. Add onions and bell pepper and sauté for 3–4 minutes until softened. Add garlic and cook for 1 minute more.
- Stir in crawfish tails and Cajun seasoning. Cook for 2–3 minutes until heated through. Season with salt and pepper to taste. Remove from heat and let cool slightly.
- In a bowl, combine mayonnaise, mozzarella, cheddar, green onions, and parsley. Fold in the crawfish mixture.
- Spread the mixture evenly over both halves of the French bread.
- Place the bread on the baking sheet and bake for 15–20 minutes, or until cheese is melted and bubbly.
- Optionally, broil for 1–2 minutes to brown the top slightly. Let cool a bit before slicing and serving.
Notes
- Use shrimp as a substitute if crawfish is unavailable.
- Adjust spice level with more or less Cajun seasoning or a dash of hot sauce.
- This dish is great for parties and can be made ahead and reheated.
