- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 2 cups shredded cooked chicken
- 2 cups uncooked egg noodles
- 1 teaspoon dried thyme
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large soup pot over medium heat.
- Add olive oil, then sauté diced onion, carrots, and celery for about 5 minutes until softened. Add minced garlic and cook for 1 minute more.
- Pour in chicken broth and stir, scraping the bottom of the pot.
- Add shredded cooked chicken, dried thyme, salt, and black pepper. Stir well.
- Bring to a gentle boil, then add egg noodles. Reduce heat and simmer for 8 to 10 minutes until noodles are tender.
- Taste and adjust seasoning if needed.
- Stir in fresh parsley just before serving and serve hot.
Notes
- For best texture when storing, cook noodles separately and add when reheating.
- Use low sodium broth to better control salt levels.
- Add a squeeze of lemon juice before serving for brightness.
- Freeze without noodles for best results.
