- 4 Boneless, Skinless Chicken Breasts
- 2 cups Fresh Kale, chopped
- 4 oz Goat Cheese, softened
- 1/3 cup Dried Cranberries
- 2 cloves Garlic, minced
- 2 tbsp Olive Oil
- Salt and Pepper, to taste
- 1 tsp Paprika
- Zest of 1 Lemon
- Toothpicks for securing
Instructions
- Preheat oven to 375°F and grease an oven-safe skillet or baking dish.
- Sauté kale and garlic in 1 tbsp olive oil until wilted. Mix with goat cheese, cranberries, lemon zest, salt, and pepper.
- Flatten chicken breasts with a mallet. Spread filling and roll tightly. Secure with toothpicks.
- Season with paprika, salt, and pepper.
- Heat remaining olive oil in a skillet. Sear chicken rolls until golden brown on all sides, about 4 minutes.
- Transfer to oven and bake for 20–25 minutes until fully cooked.
- Let rest for 5 minutes before removing toothpicks and slicing.
- Serve warm with your choice of sides.
