- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup sugar
- 2 eggs
- 1/2 cup sour cream or Greek yogurt
- 1 teaspoon vanilla extract
- 1 cup cranberry sauce (whole berry or homemade)
- 4 oz cream cheese, softened
- 2 tablespoons sugar (for cream cheese swirl)
- 1/2 teaspoon vanilla extract (for swirl)
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then add sour cream and vanilla extract until combined.
- Gradually add dry ingredients to wet ingredients and mix until just combined.
- In a small bowl, mix cream cheese, 2 tablespoons sugar, and 1/2 teaspoon vanilla until smooth.
- Spread half of the batter into the prepared pan. Spoon half of the cranberry sauce and half of the cream cheese mixture over the batter and gently swirl with a knife.
- Repeat with the remaining batter, cranberry sauce, and cream cheese, swirling again.
- Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean. Tent with foil if browning too quickly.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Use leftover cranberry sauce or make a fresh batch with fresh or frozen cranberries.
- This bread freezes well — wrap tightly and freeze for up to 2 months.
- Delicious served warm or at room temperature with a bit of butter or extra cranberry sauce.
