Description

Cranberry Cream Cheese Swirl Bread is a soft, sweet quick bread with a tangy layer of cranberry sauce and a rich cream cheese swirl, perfect for breakfast, brunch, or holiday gatherings.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup sour cream or Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup cranberry sauce (whole berry or homemade)
  • 4 oz cream cheese, softened
  • 2 tablespoons sugar (for cream cheese swirl)
  • 1/2 teaspoon vanilla extract (for swirl)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then add sour cream and vanilla extract until combined.
  4. Gradually add dry ingredients to wet ingredients and mix until just combined.
  5. In a small bowl, mix cream cheese, 2 tablespoons sugar, and 1/2 teaspoon vanilla until smooth.
  6. Spread half of the batter into the prepared pan. Spoon half of the cranberry sauce and half of the cream cheese mixture over the batter and gently swirl with a knife.
  7. Repeat with the remaining batter, cranberry sauce, and cream cheese, swirling again.
  8. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean. Tent with foil if browning too quickly.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Use leftover cranberry sauce or make a fresh batch with fresh or frozen cranberries.
  • This bread freezes well — wrap tightly and freeze for up to 2 months.
  • Delicious served warm or at room temperature with a bit of butter or extra cranberry sauce.
