A warm and comforting chicken soup made with tender vermicelli noodles, shredded chicken, and aromatic herbs. Perfect for chilly days or when you need a soothing, nourishing bowl of goodness.

- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 6 cups chicken broth
- 2 cups cooked, shredded chicken
- 3 oz vermicelli noodles (or broken angel hair pasta)
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried parsley
- Salt and black pepper to taste
- Juice of 1/2 lemon (optional, for brightness)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and sauté for 3–4 minutes until translucent.
- Add garlic, carrots, and celery. Cook for another 4–5 minutes, stirring occasionally.
- Pour in the chicken broth and bring to a boil.
- Add the shredded chicken, thyme, and parsley. Reduce heat and let simmer for 10 minutes.
- Add vermicelli noodles and cook for 4–6 minutes, or until tender.
- Season with salt and pepper to taste. Stir in lemon juice if using.
- Remove from heat. Ladle into bowls and garnish with fresh parsley.
Notes
- Use rotisserie chicken for quick prep.
- Add a pinch of chili flakes for a spicier version.
- Can be made ahead and reheated — just add a splash of broth when reheating as noodles may absorb liquid.
- Great with a slice of crusty bread or a squeeze of fresh lemon.
