Description

Cowboy Caviar Dip is a vibrant, flavorful dip packed with black beans, corn, tomatoes, avocado, and a zesty lime dressing. It’s a perfect crowd-pleaser for parties, barbecues, or as a healthy snack.


Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 cup cherry tomatoes, diced
  • 1/2 red onion, finely diced
  • 1 ripe avocado, diced
  • 1/2 cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Optional: tortilla chips, for serving

Instructions

  1. In a large bowl, combine the black beans, corn, tomatoes, red onion, avocado, and cilantro.
  2. In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and pepper.
  3. Pour the dressing over the vegetable mixture and toss gently to combine.
  4. Serve immediately with tortilla chips, or refrigerate for 30 minutes to allow the flavors to meld.

Notes

  • This dip can be made ahead and stored in the refrigerator for up to 2 days.
  • If you prefer a spicier kick, add some diced jalapeños to the mix.
  • For a creamier version, you can add a dollop of sour cream or Greek yogurt.
