- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 cup cherry tomatoes, diced
- 1/2 red onion, finely diced
- 1 ripe avocado, diced
- 1/2 cup fresh cilantro, chopped
- 1 tablespoon olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Optional: tortilla chips, for serving
Instructions
- In a large bowl, combine the black beans, corn, tomatoes, red onion, avocado, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and pepper.
- Pour the dressing over the vegetable mixture and toss gently to combine.
- Serve immediately with tortilla chips, or refrigerate for 30 minutes to allow the flavors to meld.
Notes
- This dip can be made ahead and stored in the refrigerator for up to 2 days.
- If you prefer a spicier kick, add some diced jalapeños to the mix.
- For a creamier version, you can add a dollop of sour cream or Greek yogurt.
