Description

Cowboy Casserole is a hearty and comforting one-dish meal packed with ground beef, corn, beans, cheese, and crispy tortilla chips, perfect for a family-friendly dinner that’s quick and satisfying.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 cup crushed tortilla chips
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3-4 minutes.
  3. Add ground beef, chili powder, cumin, salt, and pepper. Cook until beef is browned and cooked through, breaking it up with a spoon.
  4. Stir in black beans, corn, and diced tomatoes with green chilies. Cook for another 5 minutes until heated through.
  5. Transfer mixture to a greased baking dish.
  6. Sprinkle shredded cheddar cheese evenly on top, followed by crushed tortilla chips.
  7. Bake for 15-20 minutes until cheese is melted and bubbly, and tortilla chips are golden.
  8. Serve hot, optionally topped with sour cream, salsa, or avocado slices.

  • Use ground turkey or chicken as a leaner alternative.
