- 1 lb ground beef
- 1 small onion, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1 cup crushed tortilla chips
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3-4 minutes.
- Add ground beef, chili powder, cumin, salt, and pepper. Cook until beef is browned and cooked through, breaking it up with a spoon.
- Stir in black beans, corn, and diced tomatoes with green chilies. Cook for another 5 minutes until heated through.
- Transfer mixture to a greased baking dish.
- Sprinkle shredded cheddar cheese evenly on top, followed by crushed tortilla chips.
- Bake for 15-20 minutes until cheese is melted and bubbly, and tortilla chips are golden.
- Serve hot, optionally topped with sour cream, salsa, or avocado slices.
