- For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 tbsp sugar
- For the filling:
- 2 cups low-fat cottage cheese
- 1/2 cup Greek yogurt
- 1/2 cup sugar
- 2 large eggs
- 1 tbsp vanilla extract
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- Pinch of salt
- Optional: fresh berries or fruit topping for garnish
Instructions
- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
- For the crust, combine graham cracker crumbs, melted butter, and sugar in a bowl. Press the mixture into the bottom of the prepared pan to form an even layer. Bake for 10 minutes, then remove from the oven and set aside to cool.
- For the filling, blend the cottage cheese, Greek yogurt, sugar, eggs, vanilla extract, lemon juice, cornstarch, and salt in a food processor or blender until smooth and creamy.
- Pour the filling over the cooled crust and smooth the top with a spatula.
- Bake for 45–50 minutes, or until the edges are set and the center is slightly jiggly. Let cool at room temperature, then refrigerate for at least 4 hours or overnight to set.
- Before serving, top with fresh berries or your favorite fruit topping, if desired.
Notes
- If you prefer a sweeter cheesecake, you can increase the sugar in the filling by 1/4 cup.
- This cheesecake can be stored in the refrigerator for up to 4 days.
- For a gluten-free version, substitute the graham cracker crust with a gluten-free option or a crust made from almond flour.
