Description

This Cottage Cheese Cheesecake is a lighter and healthier twist on the classic dessert. With a creamy filling made from cottage cheese and a crisp graham cracker crust, it delivers the rich, indulgent flavor of cheesecake while being lower in fat and calories.

  • For the crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 tbsp sugar
  • For the filling:
  • 2 cups low-fat cottage cheese
  • 1/2 cup Greek yogurt
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • Pinch of salt
  • Optional: fresh berries or fruit topping for garnish

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. For the crust, combine graham cracker crumbs, melted butter, and sugar in a bowl. Press the mixture into the bottom of the prepared pan to form an even layer. Bake for 10 minutes, then remove from the oven and set aside to cool.
  3. For the filling, blend the cottage cheese, Greek yogurt, sugar, eggs, vanilla extract, lemon juice, cornstarch, and salt in a food processor or blender until smooth and creamy.
  4. Pour the filling over the cooled crust and smooth the top with a spatula.
  5. Bake for 45–50 minutes, or until the edges are set and the center is slightly jiggly. Let cool at room temperature, then refrigerate for at least 4 hours or overnight to set.
  6. Before serving, top with fresh berries or your favorite fruit topping, if desired.

Notes

  • If you prefer a sweeter cheesecake, you can increase the sugar in the filling by 1/4 cup.
  • This cheesecake can be stored in the refrigerator for up to 4 days.
  • For a gluten-free version, substitute the graham cracker crust with a gluten-free option or a crust made from almond flour.
