Description

A delightful twist on traditional Danish aebleskiver, these Cornbread Æbleskiver are savory-sweet, fluffy round pancakes made with cornmeal and cooked in a special pan for a golden crust and tender interior.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/4 cups buttermilk
  • 1/4 cup melted butter (plus more for greasing the pan)
  • Optional: chopped jalapeños, shredded cheese, or corn kernels for added flavor

Instructions

  1. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  2. In another bowl, whisk the eggs, buttermilk, and melted butter until well combined.
  3. Pour the wet mixture into the dry ingredients and mix until just combined. Do not overmix. Fold in optional ingredients if desired.
  4. Preheat your aebleskiver pan over medium heat and lightly grease each cavity with butter.
  5. Spoon batter into each well until about 3/4 full. Cook for 2–3 minutes until bubbles form on the surface and edges begin to set.
  6. Using a skewer or fork, gently turn each aebleskiver a quarter turn and continue cooking, rotating until evenly golden and cooked through.
  7. Transfer to a plate and keep warm. Repeat with remaining batter, greasing the pan as needed.

Notes

  • Serve warm with honey butter, maple syrup, or spicy jam for a flavor contrast.
  • These make a great appetizer, brunch item, or side dish.
  • Use a silicone brush to easily grease the pan between batches.
