Description
A delightful twist on traditional Danish aebleskiver, these Cornbread Æbleskiver are savory-sweet, fluffy round pancakes made with cornmeal and cooked in a special pan for a golden crust and tender interior.

- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 1/4 cups buttermilk
- 1/4 cup melted butter (plus more for greasing the pan)
- Optional: chopped jalapeños, shredded cheese, or corn kernels for added flavor
Instructions
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk the eggs, buttermilk, and melted butter until well combined.
- Pour the wet mixture into the dry ingredients and mix until just combined. Do not overmix. Fold in optional ingredients if desired.
- Preheat your aebleskiver pan over medium heat and lightly grease each cavity with butter.
- Spoon batter into each well until about 3/4 full. Cook for 2–3 minutes until bubbles form on the surface and edges begin to set.
- Using a skewer or fork, gently turn each aebleskiver a quarter turn and continue cooking, rotating until evenly golden and cooked through.
- Transfer to a plate and keep warm. Repeat with remaining batter, greasing the pan as needed.
Notes
- Serve warm with honey butter, maple syrup, or spicy jam for a flavor contrast.
- These make a great appetizer, brunch item, or side dish.
- Use a silicone brush to easily grease the pan between batches.
