Description

Tender ground chicken meatballs simmered in a rich, savory, wine-free sauce with mushrooms, onions, and herbs. A comforting twist on the French classic, perfect for weeknights or entertaining.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 1/2 cups mushrooms, sliced
  • 2 tablespoons tomato paste
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat a large skillet or Dutch oven over medium heat and drizzle in olive oil.
  2. In a bowl, mix ground chicken, breadcrumbs, egg, half the garlic, salt, and pepper. Form into small meatballs.
  3. Once the oil is hot, brown the meatballs in batches, turning until golden on all sides. Remove and set aside.
  4. In the same skillet, add onions, remaining garlic, and mushrooms. Cook until softened. Stir in tomato paste and thyme.
  5. Pour in chicken broth and bring to a simmer. Return meatballs to the pan. Cover and let simmer for 15 minutes.
  6. Uncover and let the sauce reduce slightly if needed. Taste and adjust seasoning.
  7. Spoon over mashed potatoes or noodles and garnish with fresh thyme if desired.

  • Don’t overcrowd the pan when browning.
  • Simmer gently to avoid breaking the meatballs.
