Confetti Squares are a no-bake classic treat made with creamy peanut butter, butterscotch chips, and colorful rainbow marshmallows. Sweet, chewy, and fun, they’re perfect for parties, holidays, or anytime you need a nostalgic dessert!

- 1 ⅓ cups butterscotch chips
- 1 ¼ cups smooth peanut butter
- 6 tablespoons salted butter
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- 14 ounces mini rainbow-colored marshmallows
Instructions
- Line a 9×13-inch baking dish with parchment paper or lightly grease it.
- In a large saucepan over low heat, melt the butterscotch chips, peanut butter, and salted butter together, stirring frequently until smooth.
- Remove from heat and stir in the vanilla extract and salt. Let the mixture cool for about 5 minutes to avoid melting the marshmallows.
- Gently fold in the rainbow marshmallows until evenly coated.
- Spread the mixture evenly into the prepared pan and smooth the top with a spatula.
- Refrigerate for at least 1 hour, or until set.
- Cut into squares and serve chilled or at room temperature.
Notes
- Be sure to let the peanut butter mixture cool slightly before adding marshmallows to prevent melting.
- Store in an airtight container in the fridge for up to 5 days.
- You can freeze Confetti Squares for up to 2 months—just thaw in the fridge before serving.
