- 2 tablespoons olive oil
- 1 large yellow onion, diced
- 4 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 teaspoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 2 medium carrots, diced
- 1 cup dry red lentils
- 4 cups vegetable broth
- 1 can (13.5 oz) coconut milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 1 lime
- 1/4 cup fresh cilantro, chopped
Instructions
- Place a large pot over medium heat and add the olive oil.
- Add the diced onion and sauté for 5 minutes until translucent. Stir in garlic and ginger and cook for 1 more minute.
- Add curry powder, turmeric, and cumin. Stir for 30 seconds to release the aroma.
- Add the carrots and red lentils. Stir to coat with the spices.
- Pour in the vegetable broth and coconut milk. Season with salt and pepper. Stir to combine.
- Bring to a gentle boil, then reduce heat and simmer covered for 25–30 minutes, until lentils and carrots are tender.
- Stir in lime juice and fresh cilantro. Taste and adjust seasoning as needed.
- Serve warm with extra cilantro or a swirl of coconut cream if desired.
Notes
- Use full-fat coconut milk for the creamiest texture.
- If the soup thickens too much, stir in more broth to loosen it up.
- Add a pinch of chili flakes if you prefer extra heat.
