Ingredients

- 2 cups chopped romaine lettuce (optional for a more traditional version, omit)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced into half-moons
- 1/2 red onion, thinly sliced
- 1/2 green bell pepper, sliced
- 1/3 cup Kalamata olives
- 1/2 cup feta cheese, cut into cubes or crumbled
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon red wine vinegar
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
- In a large bowl, combine tomatoes, cucumber, red onion, bell pepper, and olives.
- Add the feta cheese on top.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine, or serve with the dressing drizzled on top.
- Serve immediately, or chill for 15–30 minutes to allow flavors to meld.
Notes
- For the most authentic flavor, use block feta in brine and cut it into chunks rather than crumbled.
- Do not over-mix; a light toss helps preserve texture and presentation.
- Omit lettuce for a traditional Greek village-style salad (Horiatiki).
