Description
A crisp, creamy, and savory Caesar salad made from scratch with crunchy romaine, homemade croutons, and a tangy parmesan-rich dressing. Perfect as a side or a light main.
Ingredients

- 2 large heads romaine lettuce, chopped
- 1/2 cup parmesan cheese, shaved or grated
- 2 cups croutons
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- 2 tablespoons lemon juice, freshly squeezed
- 1 teaspoon Worcestershire sauce
- 1 egg yolk
- 1/3 cup olive oil
- Salt and black pepper, to taste
Instructions
- Preheat oven to 375°F. Line a baking sheet with parchment paper if making homemade croutons.
- In a small bowl, whisk together egg yolk, lemon juice, Dijon, Worcestershire, garlic, and a pinch of salt.
- Slowly stream in olive oil while whisking until thick and creamy. Stir in grated parmesan and pepper. Set aside.
- For croutons, toss bread cubes with olive oil and garlic powder. Bake for 10–12 minutes until golden and crispy. Let cool.
- Chop and thoroughly dry romaine lettuce.
- In a large bowl, combine romaine, croutons, and dressing. Toss gently until coated.
- Top with shaved parmesan and cracked pepper. Serve immediately.
Notes
- Make dressing up to 3 days ahead and store in the fridge.
- Dry lettuce well to help dressing adhere better.
- Use a vegetable peeler for perfect parmesan shavings.
- Only toss salad right before serving to keep croutons crunchy.
