- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup buttermilk (or milk + 1 tsp vinegar)
- 1 large egg
- 2 tbsp melted butter or vegetable oil
- 1 tsp vanilla extract
- 1/2 cup chocolate chips (optional)
Instructions
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together buttermilk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined (do not overmix). Fold in chocolate chips if using.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook another 1-2 minutes.
- Serve warm with syrup, whipped cream, or extra chocolate chips.
Notes
- Use mini chocolate chips for more even distribution.
- The batter will be thick; add a tablespoon of milk if too dense.
- These pancakes freeze well—reheat in a toaster or oven for best texture.
