For the Chocolate Cookies

  • ⅓ cup unsweetened cocoa powder (30 g)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

For the Mint Frosting

  • 1½ cups powdered sugar
  • ½ cup unsalted butter, room temperature
  • 1 tablespoon milk
  • ½1 teaspoon mint extract (to taste)
  • Green food coloring (optional)

For the Chocolate Ganache

  • ¾ cup semisweet chocolate chips or chopped chocolate (130 g)
  • 1 tablespoon oil (vegetable or canola)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Make the cookies: In a large bowl, cream together butter and sugar until light and fluffy. Beat in vanilla and egg until smooth.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add dry mixture to wet ingredients, mixing until combined.
  4. Scoop tablespoon-sized balls of dough onto prepared sheets, spacing about 2 inches apart. Bake 8–10 minutes, until edges are set. Cool completely on a wire rack.
  5. Make the frosting: Beat butter until creamy, then gradually add powdered sugar, milk, and mint extract. Adjust flavor to taste. If desired, add a drop of green food coloring. Spread frosting evenly over cooled cookies.
  6. Make the ganache: Melt chocolate chips with oil in a microwave-safe bowl (in 20–30 second intervals, stirring until smooth). Let cool slightly, then spoon or drizzle over the frosted cookies.
  7. Allow ganache to set before serving. Store cookies in an airtight container at room temperature or refrigerate for a firmer texture.
