Ingredients
Scale
For the Chocolate Cookies
- ½ cup unsalted butter, room temperature
- 1 cup granulated sugar (200 g)
- 1 teaspoon vanilla extract
- 1 large egg, room temperature
- 1¼ cups all-purpose flour (163 g), fluffed and leveled
- ⅓ cup unsweetened cocoa powder (30 g)
- ½ teaspoon baking soda
- ¼ teaspoon salt
For the Mint Frosting
- 1½ cups powdered sugar
- ½ cup unsalted butter, room temperature
- 1 tablespoon milk
- ½–1 teaspoon mint extract (to taste)
- Green food coloring (optional)
For the Chocolate Ganache
- ¾ cup semisweet chocolate chips or chopped chocolate (130 g)
- 1 tablespoon oil (vegetable or canola)
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Make the cookies: In a large bowl, cream together butter and sugar until light and fluffy. Beat in vanilla and egg until smooth.
- In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add dry mixture to wet ingredients, mixing until combined.
- Scoop tablespoon-sized balls of dough onto prepared sheets, spacing about 2 inches apart. Bake 8–10 minutes, until edges are set. Cool completely on a wire rack.
- Make the frosting: Beat butter until creamy, then gradually add powdered sugar, milk, and mint extract. Adjust flavor to taste. If desired, add a drop of green food coloring. Spread frosting evenly over cooled cookies.
- Make the ganache: Melt chocolate chips with oil in a microwave-safe bowl (in 20–30 second intervals, stirring until smooth). Let cool slightly, then spoon or drizzle over the frosted cookies.
- Allow ganache to set before serving. Store cookies in an airtight container at room temperature or refrigerate for a firmer texture.
Notes
- Use peppermint extract for a stronger mint flavor.
- Chill frosted cookies briefly before adding ganache to keep layers neat.
- Cookies freeze well—just thaw at room temperature before enjoying.
