- 1/4 tsp salt
- 1 (3.4 oz) box instant vanilla pudding mix
- 3/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 3/4 cup caramel bits or chopped soft caramels
- 3/4 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt, and pudding mix. Set aside.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, then mix in vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in chocolate chips, caramel bits, and chopped pecans.
- Scoop dough by rounded tablespoons onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10–12 minutes or until edges are golden and centers are set.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Do not overbake—cookies will continue to firm up as they cool.
- Chill dough for 30 minutes if you prefer thicker cookies.
- Drizzle with melted chocolate and caramel for extra indulgence.
