  • For the Chipotle Tomato Soup:
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 (28-ounce) can crushed tomatoes
  • 2 cups vegetable broth
  • 2 chipotle peppers in adobo sauce, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon sugar
  • Salt and pepper, to taste
  • 1/2 cup heavy cream
  • For the Smoked Cheddar Pull Apart Bread:
  • 1 loaf sourdough or artisan bread
  • 2 cups shredded smoked cheddar cheese
  • 4 tablespoons butter, melted
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and cook for another 1–2 minutes.
  3. Stir in tomato paste and cook for 1 minute. Add crushed tomatoes, vegetable broth, chipotle peppers, smoked paprika, sugar, salt, and pepper. Simmer for 20 minutes.
  4. Use an immersion blender to blend the soup until smooth, or carefully blend in batches using a blender.
  5. Stir in the heavy cream and adjust seasoning as needed. Keep warm.
  6. Preheat oven to 375°F (190°C).
  7. Cut the bread into a grid pattern, making sure not to slice all the way through.
  8. Mix melted butter, minced garlic, and parsley together. Brush between the cuts of the bread.
  9. Stuff shredded smoked cheddar between the cuts of the bread.
  10. Wrap the bread in foil and bake for 15 minutes. Unwrap and bake an additional 5–7 minutes until the cheese is melted and the top is crispy.
  11. Serve the soup hot with the cheesy pull-apart bread on the side.

Notes

  • Adjust the number of chipotle peppers based on your spice preference.
  • Swap smoked cheddar for regular cheddar if preferred, but smoked enhances the flavor.
  • For a vegetarian meal, ensure the cheddar cheese is made with vegetarian rennet.
