- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 (28-ounce) can crushed tomatoes
- 2 cups vegetable broth
- 2 chipotle peppers in adobo sauce, minced
- 1 teaspoon smoked paprika
- 1 teaspoon sugar
- Salt and pepper, to taste
- 1/2 cup heavy cream
- For the Smoked Cheddar Pull Apart Bread:
- 1 loaf sourdough or artisan bread
- 2 cups shredded smoked cheddar cheese
- 4 tablespoons butter, melted
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
- Add minced garlic and cook for another 1–2 minutes.
- Stir in tomato paste and cook for 1 minute. Add crushed tomatoes, vegetable broth, chipotle peppers, smoked paprika, sugar, salt, and pepper. Simmer for 20 minutes.
- Use an immersion blender to blend the soup until smooth, or carefully blend in batches using a blender.
- Stir in the heavy cream and adjust seasoning as needed. Keep warm.
- Preheat oven to 375°F (190°C).
- Cut the bread into a grid pattern, making sure not to slice all the way through.
- Mix melted butter, minced garlic, and parsley together. Brush between the cuts of the bread.
- Stuff shredded smoked cheddar between the cuts of the bread.
- Wrap the bread in foil and bake for 15 minutes. Unwrap and bake an additional 5–7 minutes until the cheese is melted and the top is crispy.
- Serve the soup hot with the cheesy pull-apart bread on the side.
Notes
- Adjust the number of chipotle peppers based on your spice preference.
- Swap smoked cheddar for regular cheddar if preferred, but smoked enhances the flavor.
- For a vegetarian meal, ensure the cheddar cheese is made with vegetarian rennet.
