- 2 medium sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon chipotle chili powder
- 1/2 teaspoon ground cumin
- Salt and pepper, to taste
- 1 cup quinoa, rinsed
- 2 cups vegetable broth or water
- 8 small corn or flour tortillas
- 1/2 cup fresh cilantro, chopped
- 1/4 cup diced red onion
- 1 avocado, sliced
- Optional: lime wedges, sour cream or vegan alternative, salsa
Instructions
- Preheat oven to 425°F (220°C). Toss diced sweet potatoes with olive oil, chipotle chili powder, cumin, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25–30 minutes until tender and slightly caramelized.
- Meanwhile, cook quinoa by bringing vegetable broth to a boil, adding quinoa, reducing heat, and simmering covered for 15 minutes. Fluff with a fork.
- Warm tortillas in a dry skillet or oven.
- Assemble tacos by layering quinoa, roasted sweet potatoes, and desired toppings such as cilantro, red onion, avocado slices, and optional lime juice or sour cream.
- Serve immediately and enjoy!

- For extra heat, add fresh jalapeño slices or hot sauce.
- Use gluten-free tortillas to keep this recipe gluten-free.
