- 2 boneless skinless chicken breasts, sliced into strips
- 10 ounces tagliatelle pasta
- 2 chipotle peppers in adobo, finely chopped
- 1 tablespoon adobo sauce
- 1 cup heavy cream
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 cup freshly grated parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Bring a pot of salted water to a boil and heat a large skillet over medium heat.
- Season the chicken with salt, pepper, and smoked paprika.
- Add olive oil to the skillet and cook the chicken until golden and cooked through, then remove and set aside.
- Sauté garlic and chipotle peppers in the same skillet for 1 minute.
- Stir in heavy cream and adobo sauce, letting it gently bubble.
- Add parmesan and stir until melted and the sauce thickens.
- Cook the pasta al dente, reserve some pasta water, and add pasta to the sauce along with the chicken.
- Toss everything together, adjusting the sauce with pasta water if needed, and top with parsley.
- Serve warm with extra parmesan.
