Description
Chinese Savoury Sticky Rice, also known as Lo Mai Fan, is a flavorful and comforting dish made with glutinous rice, seasoned soy sauce, and a mix of savory ingredients like Chinese sausage, mushrooms, and dried shrimp. It’s a traditional dim sum favorite and makes for a satisfying meal or side.

- 2 cups glutinous (sticky) rice
- 2 Chinese sausages (lap cheong), thinly sliced
- 4 dried shiitake mushrooms, soaked and sliced
- 2 tbsp dried shrimp, soaked and drained
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1/2 tsp white pepper
- 2 green onions, chopped
- 1 tbsp vegetable oil
Instructions
- Soak the glutinous rice in water for at least 4 hours or overnight. Drain before cooking.
- Steam the soaked rice for about 30–40 minutes until fully cooked and sticky. Alternatively, use a rice cooker suitable for sticky rice.
- Heat oil in a wok or skillet over medium heat. Sauté garlic until fragrant.
- Add Chinese sausage, dried shrimp, and mushrooms. Stir-fry for 3–4 minutes.
- Add cooked sticky rice to the wok and gently mix with the meat mixture.
- Season with soy sauce, dark soy sauce, oyster sauce, sesame oil, and white pepper. Stir until well combined and heated through.
- Garnish with chopped green onions and serve warm.
Notes
- Adjust soy sauce and oyster sauce to taste for saltiness and depth.
- Use fresh shiitake or button mushrooms if dried ones aren’t available.
- Can be served as a main dish or as a side alongside other Chinese dishes.
