  • 2 cups cooked, shredded chicken

  • 1/2 red bell pepper, sliced
  • 1/2 yellow bell pepper, sliced
  • 1/2 cup corn kernels
  • 1/2 cup black beans, drained and rinsed
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1 cup shredded lettuce
  • 1/2 cup crumbled queso fresco or shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

For the guacamole:

  • 2 ripe avocados
  • 1 small tomato, diced
  • 1 tbsp lime juice
  • 1 tbsp chopped red onion
  • 1 tbsp chopped cilantro
  • Salt to taste

Instructions

  1. Prepare the guacamole: In a bowl, mash avocados and mix with tomato, lime juice, red onion, cilantro, and salt. Set aside.
  2. Heat olive oil in a skillet over medium heat. Add sliced bell peppers, corn, and black beans. Season with cumin, chili powder, salt, and pepper. Cook for 5–6 minutes until veggies are tender.
  3. Warm the shredded chicken in the same skillet or microwave until heated through.
  4. Assemble the tostadas: Spread a spoonful of guacamole on each tostada shell.
  5. Top with shredded chicken, sautéed veggies, lettuce, and cheese (if using).
  6. Garnish with cilantro and serve immediately.

Notes

  • Use rotisserie chicken for a quick prep option.
