Description
A cozy and comforting soup filled with tender cheese tortellini, shredded chicken, fresh vegetables, and a savory herb infused broth. Perfect for chilly evenings or quick weeknight dinners.
Ingredients
Scale
- 2 cups cooked shredded chicken
- 12 ounces cheese tortellini
- 2 medium carrots, sliced
- 2 celery stalks, chopped
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 cups fresh spinach leaves
- 6 cups chicken broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried Italian herbs
Instructions
- Heat olive oil in a large soup pot over medium heat.
- Add diced onion, sliced carrots, and chopped celery. Cook for about 5 minutes until softened and aromatic.
- Stir in the minced garlic and cook for about 30 seconds until fragrant.
- Add shredded chicken, chicken broth, salt, black pepper, and dried Italian herbs. Stir to combine.
- Bring the soup to a gentle boil.
- Add the cheese tortellini and cook according to the package instructions, about 5 minutes.
- Stir in the fresh spinach and allow it to wilt in the hot broth.
- Taste and adjust seasoning if needed.
- Ladle the hot soup into bowls and serve immediately.
Notes
- Add a squeeze of lemon juice before serving for a bright finish.
- Top with grated parmesan cheese for extra savory flavor.
- If reheating leftovers, add a splash of broth because the tortellini may absorb liquid.
- For freezing, store the soup without the tortellini and add fresh pasta when reheating.
