Description

This Chicken Shawarma is packed with bold Middle Eastern spices, marinated to perfection, and cooked until juicy and golden. Serve it wrapped in warm pita with fresh veggies and creamy garlic sauce for a delicious homemade version of a street food favorite.


Ingredients

  • 1 kg boneless skinless chicken thighs
  • 3 tablespoons plain yogurt
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, whisk together yogurt, olive oil, lemon juice, garlic, and all spices.
  2. Add chicken thighs and mix to coat evenly. Cover and marinate for at least 1 hour or overnight in the fridge.
  3. Preheat oven to 220°C (425°F) or heat a grill pan over medium-high heat.
  4. Place chicken on a baking sheet or grill and cook for 20–25 minutes, flipping halfway, until cooked through and slightly charred.
  5. Let rest for 5 minutes, then slice into thin strips.
  6. Serve in pita or flatbread with garlic sauce, lettuce, tomatoes, cucumbers, and pickles.

Notes

  • For extra crispiness, broil the cooked chicken for 2–3 minutes before serving.
  • Can also be cooked on a stovetop grill pan or BBQ grill.
  • Goes great with hummus, tabbouleh, or fries.
  • Use chicken breast if preferred, but thighs remain juicier.
